2012 was an outstanding year for Pinot Noir. This wine comes from two vineyards, one in the Coal River Valley the other in the Derwent Valley. The blending between the vineyards results in creating an exciting wine which shows the terroir of each area and the vineyards.
The Coal river valley fruit adds spice, red fruits and terrific length of palate, whilst the Derwent Valley fruit adds black cherry, plum and blueberry notes including amazing sweet fruit flavours.
Hand harvesting is obligatory, the use of whole bunch fermentation at 35% adds further complexity, wild yeast, warm fermentation coupled with barrel fermentation enriches the mid palate whilst further maturation in Burgundian coopered French oak has added perfume and structure.
